Bodegas y Viñedos del Sayago
Rueda
In the municipality of Morales de Toro
(in the province of Zamora), you can find the Lomopardo Estate, where
the Sayago Winery is located in Rueda. Here they create only one wine
- Viña Oropendola. It is made from a selection of quality vineyards
located in the province of Segovia in northwestern Spain. Using only
100% Verdejo with vines that are trained in a goblet, this is ideal
vine training for the particular climate of Reuda where it is very hot.
The vines age ranges between 40 and 120 years old.
The vineyards are located in soils that are sandy with gravel on top
of a layer of clay that creates the perfect condition for the Verdejo
variety to grow, giving the wines great aromatic profile, complexity
and unctuousness on the palate.
The grapes are all hand-harvested and go through a cold maceration on
the skins for 16-20 hours and are later fermented for 20 days in stainless
steel tanks under controlled temperature with a 7 month lees contact
to add depth and complexity.

The combination of old vines, soil and vinification process creates
a wine that delivers amazing amount of complex aromatics offering refined
notes of lemon blossom, white figs, pepper, hints of Japanese Yuzu citrus
fruit, delicate lychee notes and floral character. On the palate it
shows superb concentration with great layers that are refreshing and
dry making it a truly rewarding experience.
